Base pick
Victorinox Fibrox Pro 8-inch Chef's Knife
A light, stamped blade with a grippy handle. Plenty of knife for most home cooks.
Our take
This is the knife many cooking schools hand out on day one, for boring reasons: it is light, it takes an edge quickly, and the textured handle stays put when your hands are wet. The blade is stamped from sheet steel rather than forged, so there is no bolster at the heel. That means the whole edge can be sharpened, now and after years of wear. The trade-off is that the edge rolls sooner and wants a few strokes on a honing rod most weeks.
Worth knowing
- No bolster, so the full length of the edge stays easy to sharpen for the life of the knife.
- The handle is textured plastic. It looks utilitarian and grips well when wet.
- Listed as dishwasher-safe. A dishwasher still dulls any edge faster, so wash it by hand.
Where it fits
This is the base pick in Chef's knife: is forged worth it?. Our verdict there: It depends
Save if you will hone weekly and like a light blade. Spend if you hate sharpening and cut dense vegetables most nights.
The other pick: Wüsthof Classic 8-inch Chef's Knife.
