Base pick

Tramontina Professional 10-inch Nonstick Fry Pan

Restaurant-style aluminum with a coating that will wear out on schedule, like all of them.

Our take

Heavy-gauge aluminum heats quickly and evenly, and the reinforced nonstick coating releases eggs and fish as well as pans that cost several times more. It is NSF-certified, oven-safe to 400°F, and has a removable silicone sleeve on the handle. It does not work on induction. Like every coated pan, it will lose its slickness after a few years of regular use, and that is the case for buying it: when the coating goes, replacing the pan doesn't hurt.

Worth knowing

  • Not induction-compatible. That is the most important line on the listing.
  • Keep the heat at medium or below. High heat shortens any coating's life.
  • Use wood or silicone tools; metal speeds up wear.

Where it fits

This is the base pick in Nonstick skillet: why we say save. Our verdict there: Save

Save. Every nonstick coating wears out, so buy the pan you won't mind replacing. Spend only if you cook on induction.
